Janez Bratovž (JB Restavracija, Ljubljana)

Bratovž finds sweetness in earth, salinity in water, acidity in air, bitterness in fire and harmony on a plate. His lines remain sharp, his flavors cosmopolitan and his plates full of unique creations. Michelin judges can regret not coming in Slovenia.

David Vračko (Restavracija Mak, Maribor)

Although the restaurant is close to the cemetery and the chef’s hair is too long, David’s dishes smell like a meadow and consist of vivid colors, fresh aromas, rich flavors, daring combinations, creative shapes and joyful expectations. 

Tomaž Bolka (Gostilna Krištof, Predoslje)

Stop by Krištof’s for a ričet or Kranjska sausage. Cook it yourself, order from the menu or get take out. However, if you want to experience the wild and the organic, then let Tomaž take over. He loves searching for organic ingredients, discovering the alternatives, adapting the menu to the season, creating organic dishes for the kids, and making Mondays evenings full of beer, pretzels and hard boiled eggs.
